Preserving the Flavours Of the Land
We gently harvest during the cool morning hours to retain the bright, pristine characteristics of the grapes. With the fruit arriving at our winery possessing such extraordinary flavours and textures, our primary task is to preserve and enhance those elements. Gentle crushing, cold fermentations, and non-oxidative winemaking techniques translate to precise, vivid, dynamic aromatics. Our Pinot Noirs and Chardonnays are matured in French Oak barriques to integrate the fruit and add complexity. All wines are bottled under screwcap to ensure absolute purity and freshness.
On first impression, our Sauvignon Blanc reminds us of gooseberries, passion fruit and limes. But dig a little deeper and you’ll uncover the cool mountain winds, briny ocean fog and fist-sized stones that define the Wairau Valley. Brilliant, exuberant and bold are three words often used to describe Goldwater’s Sauvignon Blanc.
Our Pinot Gris is concentrated and luscious. It is pale straw gold in colour and intensely aromatic with aromas of fresh pear and spice. The palate displays real concentration accentuated by rich ripe flavours, stone fruit and spicy nuances. It is soft, full and balanced with a long, elegant finish.
For greater weight and complexity we use a number of Burgundian techniques including barrel fermentation and aging in French oak on the lees (stirred) for eight months. Goldwater’s Chardonnay consistently delivers fresh aromas of peach, apricot and lime combined with citrus and toasty oak. The texture is smooth and silky and the finish is beautifully balanced.
Our Pinot Noir shows the influence of our unique climate and complex soils. After harvesting, we use traditional plunging techniques during fermentation to ensure vibrant colour and fine tannins. The wine is then aged in a mix of new and one-year old French oak barriques for a minimum of nine months. The aromas and flavours are packed with raspberries, black cherries and spice. The palate is rich, round, elegant and graceful.
